Ingredients

  • 65g diced chorizo, we used M&S Spanish Diced Chorizo
  • 400g tin plum tomatoes, we used Ocado Italian Plum Tomatoes
  • 30g basil
  • 250g fresh taglioni, we used The Fresh Pasta Company
  • 100g burrata, we used M&S Italian Burrata

Method

  • Step 1

    Heat a medium pan over a medium heat. Add the chorizo and cook for 5 mins until crispy. Remove half to a bowl using a slotted spoon.
  • Step 2

    Add the tomatoes, 200ml water (swirled from the tin) and half the basil. Squish the tomatoes down with the back of a spoon and simmer for 15 mins until the sauce has reduced.
  • Step 3

    Meanwhile, cook the pasta according to the pack instructions.
  • Step 4

    Transfer the pasta to the sauce pan using tongs along with a splash of pasta water. Toss to combine until the pasta is fully coated.
  • Step 5

    To serve, divide the pasta between 2 bowls. Tear over the burrata, and sprinkle over the reserved chorizo and the remaining basil leaves.
