Marry Me Prosecco Pasta

Ready in just 15 mins, this sharing plate of pasta is the perfect dinner to share with loved ones. Inspired by the flavours of Marry Me Chicken, we’ve added our own Valentine’s Day touch of sparkle with a splash of prosecco in the creamy tomato sauce and using these cute heart pasta shapes.

Ingredients

  • 160g Barilla Pasta Hearts
  • 2 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 garlic clove, crushed
  • 0.5 tsp chilli flakes
  • 4 tbsp sun-dried tomato paste
  • 75ml prosecco
  • 100ml chicken stock
  • 75ml double cream
  • 2 tbsp grated parmesan, plus extra to serve
  • 100g burrata
  • 0.5 lemon zest
  • small handful basil, leaves picked, to serve

Method

  • Step 1

    Cook the pasta in salted boiling water to packet instructions. Drain and reserve a splash of cooking water.
  • Step 2

    Meanwhile, heat the olive oil in a shallow casserole dish and gently cook the onion for 5 mins until softened.
  • Step 3

    Add the garlic, chilli flakes and sun-dried tomato paste then cook for 2 mins.
  • Step 4

    Pour in the prosecco and bubble for 1 min. Add the chicken stock, cream and 2 tbsp grated parmesan then bring to the boil and simmer for 1-2 mins until thickened.
  • Step 5

    Tip in the cooked pasta and stir until coated in sauce, add a splash of reserved cooking water if you need to loosen it.
  • Step 6

    Remove from the heat, top with burrata, lemon zest, basil and plenty of black pepper then set on the table to serve with extra parmesan, if you like.
