
Marshmallow Squares

Ingredients
- 110g unsalted butter
- 2 tsp vanilla bean paste (or use vanilla extract)
- 1 tsp fine sea salt
- 250g mini marshmallows (vegetarian, if required)
- 200g Ritz Original Mini Crackers (8 packets), 10g reserved, the rest gently crushed into big chunks
- 150g roasted salted peanuts, 10g reserved, the rest roughly chopped
Method
Step 1
Line a 20cm square tin or dish with baking paper. In a large saucepan, melt the butter over a medium-low heat for 10 mins or so, until frothing vigorously and light brown solids have formed.Step 2
Turn off the heat and immediately stir in the vanilla and fine salt, followed by the marshmallows, until melted and smooth.Step 3
Add the crushed crackers and chopped peanuts; mix well to ensure everything is coated in the sticky mallow. Scrape into the lined tin or dish, wet your hands to reduce stickiness and press down firmly. Then gently press the reserved crackers and peanuts into the top. Chill for at least 20 mins or up to 2 hrs to firm up.Step 4
Once firm, cut into 16 squares and serve. Store in an airtight container at room temp for up to 1 week or freeze for up to 6 weeks. Defrost at room temp.Step 5
