
Masala Omelette Traybake Bagels

The ultimate high-protein, easy meal prep. Baking 12 eggs and spices in one tray quickly creates six servings that are simple to slice, store, and reheat. Enjoy a flavourful, grab-and-go breakfast on a bagel thin all week!

Ingredients
- 12 medium eggs
- 150g cherry tomatoes, halved or quartered if large
- 2 red onions, finely chopped
- 1 tbsp garam masala
- 30g coriander, finely chopped
- 6 bagel thins, to serve
- Hot sauce (optional)
Method
Step 1
Preheat the oven to 180 °C fan. Line a 25cm x 20cm traybake tin with baking paper.Step 2
In a large bowl, mix the eggs, cherry tomatoes, red onions, garam masala, and most of the coriander. Season with salt and pepper.Step 3
Pour the mixture into the prepared tray and bake in the oven for 20–25 mins, or until set and lightly golden.Step 4
Remove from the oven, allow to cool for 10mins. Slice into 6 portions. Serve each portion inside a toasted bagel thin, with some hot sauce if you like.Step 5
To store, wrap each in tin foil or baking parchment and keep in the fridge. To serve, unwrap and microwave or reheat in the oven/airfryer until hot.
