Masala Omelette Traybake Bagels

Ingredients

  • 12 medium eggs
  • 150g cherry tomatoes, halved or quartered if large
  • 2 red onions, finely chopped
  • 1 tbsp garam masala
  • 30g coriander, finely chopped
  • 6 bagel thins, to serve
  • Hot sauce (optional)

Method

  • Step 1

    Preheat the oven to 180 °C fan. Line a 25cm x 20cm traybake tin with baking paper.
  • Step 2

    In a large bowl, mix the eggs, cherry tomatoes, red onions, garam masala, and most of the coriander. Season with salt and pepper.
  • Step 3

    Pour the mixture into the prepared tray and bake in the oven for 20–25 mins, or until set and lightly golden.
  • Step 4

    Remove from the oven, allow to cool for 10mins. Slice into 6 portions. Serve each portion inside a toasted bagel thin, with some hot sauce if you like.
  • Step 5

    To store, wrap each in tin foil or baking parchment and keep in the fridge. To serve, unwrap and microwave or reheat in the oven/airfryer until hot.
