Ingredients

  • 2 large eggs
  • 0.5 tsp garam masala
  • 1 pinch mild toasted curry powder
  • 0.5 mild sweet white onion, finely chopped
  • 1 vine tomato, diced
  • 1 green chilli, finely chopped (deseeded, if preferred)
  • 1 handful spinach, chopped
  • 1 handful coriander, stems finely chopped, leaves torn
  • 1 pork sausage, sliced
  • 1 tsp sunflower oil
  • 1 wholewheat tortilla wrap
  • 0.5 tbsp mango chutney

Method

  • Step 1

    In a bowl, beat the eggs with the garam masala and curry powder; season. Add the onion, tomato, chilli, spinach and coriander stems, and mix.
  • Step 2

    Fry the sliced sausage in the oil in a hot pan until cooked. Add the egg mixture; cook for 2-3 mins, tilting the pan to spread the egg until set all over.
  • Step 3

    Spread the tortilla wrap with the chutney and scatter over the torn coriander leaves. Slide the omelette out of the pan onto the wrap. Roll it up, cut in half and tuck in.
