
Masala Salsa

For a speedy and versatile way to perk up mealtimes, make a batch of this punchy Masala Salsa. It’s works brilliantly with all kinds of dishes – as a marinade, dressing or accompaniment – from roast meat and veg to grilled fish, rice, noodles, eggs and more. Store in a chilled airtight container for up to 2 weeks.

Ingredients
- 8 tbsp olive oil
- 1½ tbsp hot madras curry powder
- 2 garlic cloves, crushed
- 2 tbsp tomato ketchup
- 25g flat-leaf parsley, finely chopped
- 25g coriander, finely chopped
- ½ tbsp white wine vinegar
Method
Step 1
Fry 2 tbsp olive oil with the curry powder and garlic over a medium heat for 2 mins. Stir in the ketchup, 60ml water and ¼ tsp salt; cook for 5 mins, stirring occasionally.Step 2
Mix in the remaining oil and leave to cool.Step 3
Stir in the flat-leaf parsley, coriander and vinegar; season to taste. Store chilled until ready to use (for up to 2 weeks).
