It’s works brilliantly with all kinds of dishes – as a marinade, dressing or accompaniment – from roast meat and veg to grilled fish, rice, noodles, eggs and more. Store in a chilled airtight container for up to 2 weeks.

Ingredients

  • 8 tbsp olive oil
  • 1½ tbsp hot madras curry powder
  • 2 garlic cloves, crushed
  • 2 tbsp tomato ketchup
  • 25g flat-leaf parsley, finely chopped
  • 25g coriander, finely chopped
  • ½ tbsp white wine vinegar

Method

  • Step 1

    Fry 2 tbsp olive oil with the curry powder and garlic over a medium heat for 2 mins. Stir in the ketchup, 60ml water and ¼ tsp salt; cook for 5 mins, stirring occasionally.
  • Step 2

    Mix in the remaining oil and leave to cool.
  • Step 3

    Stir in the flat-leaf parsley, coriander and vinegar; season to taste. Store chilled until ready to use (for up to 2 weeks).
