
Mashed Potato Croquettes with Parmesan & Bacon

You can use pre-made mash for this, but if the consistency
is wet you’ll only need one yolk.Time and servings

Ingredients
- 500 g of mashed potato
- 50 g of parmesan, grated
- 1 tbsp of plain flour
- 1 tbsp of vegetable oil for frying
- 3 rashers bacon, finely chopped
- 4 large eggs, plus 2 extra egg yolks
- 2 tbsp of fresh chives, chopped
- 150 g of breadcrumbs
Method
Step 1
Fry the bacon and mix in a bowl with the egg yolks, mash, parmesan, chives and flour. Roll into egg-size patties and flatten slightly. Chill in the fridge for 30 mins.Step 2
Beat 4 eggs in a bowl and place the breadcrumbs in another bowl. Pour 1cm of oil into a frying pan and put on a medium-high heat.Step 3
Dip a patty in the egg bowl, then roll in the breadcrumbs.Step 4
Repeat and fry in batches, with space around each croquette. Turn until golden on all sides for 3-4 mins.Step 5
Remove and blot before serving with a squeeze of lemon and a crunchy green salad.
