
Matcha Popcorn Cake

This Matcha Popcorn Cake is our tasty twist on a super simple no-bake treat. Ready in just 15 mins, it’s the perfect last minute sweet snack. Savoury, nutty matcha green tea brings grown-up flavours and vibrant colour but if you’re cooking for the whole family simply leave it out.

Ingredients
- 125g salted butter, plus 1 tbsp melted
- 1 tbsp icing sugar
- 275g marshmallows
- 1 tsp matcha green tea powder, plus a pinch to sprinkle
- 120g sweet and salted popcorn
- 75g white chocolate, melted
Method
Step 1
Brush the melted butter over the tin then sprinkle in the icing sugar and shake to evenly coat.Step 2
Set a large pan over a medium heat. Add the remaining 125g butter to the pan and gently melt. Once melted add the marshmallows and mix until melted and smooth.Step 3
Sprinkle in the matcha and stir until combined. You can return the pan to a gentle heat to help everything come together.Step 4
Tip in the popcorn and mix well. Spoon and scrape into the prepared tin. Flatten the base then set aside to firm up.Step 5
Once set, turn out and drizzle with melted chocolate. Sprinkle with an extra pinch of matcha powder, if you like then slice to serve.
