Ingredients
- 400 g of beyond meatballs
- 2 tbsp of olive oil
- 200 ml of vegan red wine
- 2 (400g) tins chopped tomatoes
- 1 tsp of caster sugar
- 1 small handful of basil, leaves torn and stalks finely chopped
- 300 g of pasta
Method
Step 1
Preheat the oven to 220ºC/200º/gas mark 7.Step 2
Toss the meatballs with the oil in a roasting tin and bake in the oven for 10 mins. Take out the tin and add the wine, then return to the oven for another 10 mins. Remove from the oven, add the chopped tomatoes, sugar and basil stalks. Return to the oven for another 10 mins.Step 3
Meanwhile, cook the pasta according to the pack instructions.Step 4
Remove the meatballs from the oven and serve with the pasta and basil leaves.
