Ingredients

  • 1.5 tbsp olive oil, plus a little extra for drizzling
  • 2 garlic cloves, crushed
  • 1 (600g) pack frozen ratatouille
  • 1 (400g) tin cannellini beans, drained
  • 1 (400g) tin finely chopped tomatoes with basil
  • 1 (160g) pack fresh herb falafels

Method

  • Step 1

    Heat the oil in a shallow flameproof roasting dish. Add the garlic and cook gently for 1 min, stirring.
  • Step 2

    Add the ratatouille, cannellini beans and chopped tomatoes. Simmer for 12 mins, stirring now and then, until thickened. Season to taste.
  • Step 3

    Meanwhile, heat the grill to very hot. Crumble the falafels over the top of the veg, drizzle with a little more oil and grill for 3-4 mins until crisp.
