Ingredients
- 1.5 tbsp olive oil, plus a little extra for drizzling
- 2 garlic cloves, crushed
- 1 (600g) pack frozen ratatouille
- 1 (400g) tin cannellini beans, drained
- 1 (400g) tin finely chopped tomatoes with basil
- 1 (160g) pack fresh herb falafels
Method
Step 1
Heat the oil in a shallow flameproof roasting dish. Add the garlic and cook gently for 1 min, stirring.Step 2
Add the ratatouille, cannellini beans and chopped tomatoes. Simmer for 12 mins, stirring now and then, until thickened. Season to taste.Step 3
Meanwhile, heat the grill to very hot. Crumble the falafels over the top of the veg, drizzle with a little more oil and grill for 3-4 mins until crisp.
