Mediterranean Chicken Traybake with Feta, Rice & Red Onion Pickle

Ingredients

  • 600 g of frozen mediterranean veg mix
  • 4 chicken breast fillets
  • 400 g of tinned cherry tomatoes
  • 500 g of microwaveable basmati rice
  • 200 g of feta cheese, crumbled
  • 4 tbsp of extra virgin olive oil
  • 1 chicken stock cube, dissolved in 250ml of boiling water
  • 1 red onion, peeled and finely sliced into rings
  • 3 tbsp of cider vinegar
  • 15 g of fresh oregano, chopped

Method

  • Step 1

    Preheat oven to 200°C/180°C fan/gas 6. In a large baking tray, add the frozen veg with 1tbsp of the olive oil, and put this in the oven for 5 mins to start cooking.
  • Step 2

    Add another 1tbsp oil, the chicken fillets, stock and tinned cherry tomatoes to the baking tray. Season and toss everything together so it’s all coated, and put back in the oven for 25 mins. Halfway through cooking, give everything a good mix.
  • Step 3

    Meanwhile, put the onion rings into a small bowl with the vinegar to gently pickle.
  • Step 4

    Just before the chicken and veg are ready, pop the rice into the microwave for 2½ mins, or cook according to pack instructions.
  • Step 5

    Remove the bake and stir the rice through, along with the remaining 2tbsp oil, oregano and feta.
  • Step 6

    Drain the onion rings from the vinegar and scatter them over the bake. Serve on its own or with a lovely fresh green salad.
