
Mediterranean Sea Bass With Samphire And Watercress

Ingredients
- 1 sea bass
- 1 samphire
- 2 tsp of olive oil
- 1 steve’s leaves baby watercress and little leaves
- 1 tsp of extra virgin olive oil
- 1 tsp of balsamic vinegar
- 1 lemon wedge
Method
Step 1
Preheat oven to 180°C/160°C fan/gas 4 and line a baking sheet with baking paper.Step 2
Lightly brush 1tsp of the olive oil over both sides of the fish and lay them onto the baking sheet. Place them into the oven for 18 mins.Step 3
While the fish is cooking, heat a frying pan with the remaining oil. Add the samphire and a little salt and pepper. Cook for 2-3 mins until the samphire is just starting to wilt.Step 4
Toss the salad leaves in the extra virgin olive oil and balsamic vinegar.Step 5
Serve each sea bass alongside half the salad leaves and samphire, with a lemon wedge on the side.
