This Mediterranean Tuna Toast
from Scandi cook Signe Johansen is an easy, breezy, fresh-tasting dish that’s
simple to whip up for one or more people – great for evenings when you can’t be
bothered to cook anything elaborate. The combination of tuna, olives, capers
and chilli tastes fresh and summery, whatever time of year it is. As a variation,
you could try it with sardines too. Time and servings

Ingredients
- 4 pitted green and/or black olives, sliced
- 160 g of tin tuna, drained
- 4 small tomatoes, coarsely chopped
- 1 tsp of capers, drained
- 0.25 lemon, zested, and juiced
- 1 small pinch chilli flakes
- 2 tbsp of butter beans, drained and rinsed
- 1 tbsp of extra virgin olive oil
- 1 small handful of rocket leaves
- 2 slices of sourdough
Method
Step 1
Put all the ingredients (except the bread and rocket or salad leaves) into a bowl. Season to taste with sea salt and ground black pepper and mix everything together.Step 2
Toast the bread, then divide the tuna mixture evenly between the slices and top with the rocket or salad leaves. Alternatively, eat as a toasted sandwich: just pile everything onto one slice and top with the other!
