Ingredients

  • 250 g of demerara sugar
  • 180 ml of mellow yellow rapeseed oil
  • 45 ml of milk(or dairy-free equivalent)
  • 5 medium of eggs
  • 250 g of self-raising flour
  • 1 tsp of ground cinnamon
  • 1.5 tsp of mixed spice
  • 50 g of ground almonds
  • 75 g of glacé cherries, (chopped)
  • 1 kg of mixed dried fruit
  • 3 tbsp of amaretto or brandy
  • 1 tbsp of apricot jam, (for decorating)
  • 1 kg of marzipan, (for decorating)
  • 1 kg of white sugar paste icing

Method

  • Step 1

    Preheat the oven to 140°C. Grease and line a 20cm round tin.
  • Step 2

    Pour the Mellow Yellow oil, milk and sugar into a bowl. Beat the eggs and gently fold into the oil mixture. Add the amaretto/brandy and stir in well. Sieve the flour and spices into the bowl, then add the ground almonds. Fold this in to form a batter, add the dried fruit and give a final stir to mix evenly.
  • Step 3

    Pour the mixture into the tin. Bake for around 3 hours or until cooked through (it will be firm to press and a skewer will come out clean). After an hour of baking, you can sit some greaseproof paper on top to stop it from over browning.
  • Step 4

    Cool completely on a wire rack. Store in an airtight container until you are ready to decorate, feeding with a little extra amaretto/brandy every few days to keep it moist.
  • Step 5

    To decorate, gently warm up a small amount of apricot jam and brush this over the outside of the cake. Roll out your marzipan and cover the cake. Lightly brush the marzipan with a little bit of water. Roll out the icing and cover the marzipan, smoothing the icing down the cake and trimming off any excess at the bottom. Finish with your chosen decorations.
