
Melon and Halloumi Skewers

“Honeydew melon is great for grilling, holding its shape well on the barbecue,” says Honey & Co founders Sarit Packer and Itamar Srulovich. who created these Melon and Halloumi Skewers. The pairing of melon with salty halloumi and a zingy mint and chilli salsa it makes a simple but showstopping skewer. Aim to keep the melon and halloumi pieces roughly the same size so they cook evenly. If you’re using wooden skewers, soak them in hot water for 30 mins to stop them catching on the grill. This recipe makes 8 skewers.Time and servings

Ingredients
- 1 honeydew or galia melon, peeled, deseeded and cut into 16 cubes
- 2 (250g) packs halloumi, cut into 16 cubes
- 50g bunch of mint, leaves picked and finely chopped, a few small leaves reserved to garnish
- 1 red chilli, deseeded and finely chopped
- 1 green chilli, deseeded and finely chopped
- 1 tsp dried oregano
- 1 tbsp white wine vinegar
- 4 tbsp olive oil, plus extra for drizzling.
Method
Step 1
Thread 2 cubes each of melon and halloumi onto skewers, alternating between them. Place on a tray, cover and chill until needed.Step 2
For the salsa, mix the remaining ingredients in a bowl and season to taste. Cover and chill until needed.Step 3
Cook on a barbecue or hot griddle. Drizzle oil over the top, season with black pepper and grill for 2 mins on each side until lightly charred. Arrange on a platter, spoon over some salsa and scatter with the mint leaves. Serve with any remaining salsa on the side.
