8 total
  • 1 honeydew or galia melon, peeled, deseeded and cut into 16 cubes
  • 2 (250g) packs halloumi, cut into 16 cubes
  • 50g bunch of mint, leaves picked and finely chopped, a few small leaves reserved to garnish
  • 1 red chilli, deseeded and finely chopped
  • 1 green chilli, deseeded and finely chopped
  • 1 tsp dried oregano
  • 1 tbsp white wine vinegar
  • 4 tbsp olive oil, plus extra for drizzling.

Method

3 steps
  1. Step 1

Thread 2 cubes each of melon and halloumi onto skewers, alternating between them. Place on a tray, cover and chill until needed.

  2. Step 2

For the salsa, mix the remaining ingredients in a bowl and season to taste. Cover and chill until needed.

  3. Step 3

Cook on a barbecue or hot griddle. Drizzle oil over the top, season with black pepper and grill for 2 mins on each side until lightly charred. Arrange on a platter, spoon over some salsa and scatter with the mint leaves. Serve with any remaining salsa on the side.
