
Melted Cheese and Chorizo Dip

Every party needs a good dip, especially this riff on the Mexican queso fundido. It’s hearty too, so should fill your guests up. For a veggie take, replace the chorizo mixture with chopped roasted red pepper and onion. And if you need to reheat, just pop back on the hob for a bit. Time and servings

Ingredients
- 200 g of gruyère, grated
- 100 g of chorizo, diced
- 100 g of grated mature cheddar
- 1 tsp of olive oil
- 0.5 onion, diced
- 180 g of emmental, grated
- 120 ml of beer
- 1 bag of tortilla chips
Method
Step 1
Toss all the cheese together in a bowl and set aside.Step 2
Set a saucepan on a medium heat, add the olive oil and chorizo, cook for 2 mins until the oils start to release. Add the onion, stirring until softened. Remove and set aside.Step 3
Bring the beer to a simmer in the pan – add the cheese a handful at a time, stirring until it’s all melted.Step 4
Serve in a dish, layering in the chorizo mixture alongside tortilla chips.
