
Mexican Chicken Soup

There’s nothing more comforting than a bowl of hearty warm soup especially one flavoured with our smoky Chipotle Paste! This recipe has all the deliciousness of a hearty soup but without having to work in the kitchen for hours to make it. It’s also the perfect way to use that leftover rotisserie chicken in your fridge.Time and servings

Ingredients
- 1 tbsp of rapeseed oil
- 1 red onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 tbsp of gran luchito chipotle paste
- 1 tbsp of tomato puree
- 1 tin of chopped tomatoes
- 3 cups of chicken stock
- 4 carrots
- 400 g of cooked chicken, shredded
- 1 bay leaf
- 1 packet of gran luchito cantina beans
- 4 cups of gran luchito lightly salted tortilla chips
- 1 cup of sour cream
Method
Step 1
Add the oil to a deep saucepan and fry onion and garlic gently.Step 2
Add the Chipotle Paste and tomato paste, cook for a minute or two stirring continuously.Step 3
Pour in the chopped tomatoes, chicken stock and water, add the carrots, shredded chicken and bay leaf, simmer on a medium heat for 20 minutes or so.Step 4
Once your carrots are cooked add the Cantina Beans (plus juices) and season with salt and pepper, taste and adjust seasoning according to your preference, simmer your soup for another 10 minutes on a medium heat.Step 5
Serve your Chicken and Bean Chipotle soup hot, with a dollop of sour cream and crumbled Lightly Salted Tortilla Chips on top, enjoy!
