
Mexican Cottage Pie

Ingredients
- 1 jar of fajita sauce
- 2 tablespoons of oil
- 1 onion, chopped
- 1 red pepper, chopped
- 2 sticks of celery, chopped
- 500 g of lean minced beef
- 1 kg of potatoes, peeled and cut into small pieces
- 25 g of butter
- 50 g of cheddar cheese, grated
Method
Step 1
Preheat the oven to 200°C.Step 2
Heat oil in a large pan and fry onion, pepper and celery for about 5 minutes, until softened. Add mince and seasoning from spice cap and fry over high heat until browned.Step 3
Add Sauce and 1/2 jar of water and bring to the boil. Cover and simmer for 30 minutes, or until thick and tender.Step 4
Boil potatoes in salted water until cooked. Drain and mash with butter.Step 5
Transfer mince to an ovenproof dish. Top with potato, sprinkle with cheese and cook in preheated oven for 30 minutes or until well browned and bubbling.
