- 200 g of thinly sliced/ shredded apple
- 1 red onion, (plus an extra quater cup of thinly sliced red onion)
- 0.5 tsp of sea salt
- 0.5 cup of chopped coriander
- 0.25 green chilli or jalapeño, (Finely chopped, can use a half instead)
- 0.25 cup of fresh lime juice, (plus extra limes as wedges for garnish)
- 2 tbsp of olive oil
- 3 avocado slices, (Garnish)
- 1 tbsp of sour cream, (Garnish to taste)
Method
Step 1
Rinse and pat dry fish. Place the fish on a plate and rub spice, oil and salt over the fillets. Set aside.Step 2
Place the shredded cabbage and apple in a medium bowl. Toss with the salt. Add the onions, coriander, jalapeño, lime juice, olive oil and toss well. Adjust lime, salt and jalapeño- you want this to taste tangy.Step 3
Grease the grill well before placing fish on it. Turn heat to medium. Grill each side a few minutes, letting grill marks develop and use a metal spatula to flip.Step 4
Then quickly grill the corn tortillas on the hob, brushing with olive oil if you prefer.Step 5
Assemble tacos by placing fish in the tortilla, top with slaw and an optional avocado slice.Step 6
Drizzle with Chipotle sour cream if you like.
