Mexican-Style Pork Burgers with Salsa and Guacamole

For a fast after-school meal, these Mexican-Style Pork Burgers with Salsa and Guacamole are hard to beat. Created by cookery teacher and food writer Rebecca Woollard, they encourage kids to try new ingredients by combining reliably child-friendly favourites with a few zippy, fresh flavours. For more traditional burger patties, use pork mince instead, with a little of the fajita seasoning stirred through.

Ingredients

  • 1 198g tin sweetcorn, drained and rinsed
  • 2 salad onions, finely sliced
  • 0.5 cucumber, deseeded and finely chopped
  • 1 red chilli, deseeded and finely chopped (optional)
  • 25 g of coriander, finely chopped
  • 2 tsp of red wine vinegar
  • 0.5 runny honey (optional)
  • 2 ripe avocados
  • 1 lime, juiced
  • 8 cherry tomatoes, diced
  • 2 pork loin steaks, rind removed
  • 2 pinches of of fajita seasoning
  • 1 tbsp of olive oil, for brushing
  • 4 burger buns
  • 4 little gem lettuce leaves
  • 1 tbsp of barbecue or chilli sauce, to serve (optional)

Method

  • Step 1

    To make the salsa, combine the sweetcorn, salad onions, cucumber, chilli, coriander, vinegar and honey (if using) in a bowl and set aside. For the guacamole, scoop the avocado into a separate bowl and mash with the lime juice and a pinch of salt. Stir through the tomatoes; set aside.
  • Step 2

    Put the pork steaks between 2 pieces of baking paper, then bash with a rolling pin to about 1cm thick. Cut each steak in half to make 4 similar-sized pieces. Dust both sides with fajita seasoning (go easy for young kids) and season lightly with salt.
  • Step 3

    Heat a heavy-based frying pan over a high heat. Brush the steaks with oil, then fry for 2 mins each side, until golden and cooked through. Remove from the heat; rest for 2 mins. Halve and toast the buns.
  • Step 4

    To serve, spread some guacamole on the bun bases, top with a pork steak, a lettuce leaf and some salsa. Spread the tops of the buns with barbecue or chilli sauce, if using, and sandwich together.
