Mince Lettuce Larb Inspired Wraps

This vibrant, fragrant mince, inspired by south-east asian flavours, is a perfect easy midweek winner. Serve the warm mixture in crisp little gem leaves for a delicious, light high protein dinner.

Ingredients

  • 1 tbsp olive oil
  • 500g beef mince
  • 1 red chillies, finely chopped
  • 3 garlic cloves, crushed
  • 4 tbsp fish sauce, separated for mince and dressing
  • 2 tbsp soy sauce, separated for mince and dressing
  • 1 lime zested and juiced, separated for mince and dressing
  • 6 salad onions, thinly sliced
  • 3 little gem lettuce
  • 50g peanuts, roughly chopped, we used Nobby's Nuts Classic Salted Peanuts
  • 30g mint, leaves picked

Method

  • Step 1

    Place a large frying pan over a medium-high heat. Add the oil and beef mince and cook, breaking it up with a wooden spoon, until it is browned and any liquid has evaporated.
  • Step 2

    Add half of the finely chopped red chillies and half of the crushed garlic to the pan and fry for 1 min or until fragrant. Stir in 2 tbsp of the fish sauce, 1tbsp soy sauce, and the lime zest. Remove the pan from the heat.
  • Step 3

    In a small bowl, combine the remaining 2 tbsp fish sauce with 1tbsp soy sauce, the lime juice, the remaining half of the chillies and garlic and 1 tbsp water to make the dipping sauce.
  • Step 4

    Mix the thinly sliced salad onions and half of the mint into the mince mixture.
  • Step 5

    Separate the little gem lettuce leaves and arrange them on a platter. Spoon the mince mixture into the lettuce cups.
  • Step 6

    Sprinkle the lettuce wraps with the roughly chopped peanuts and the remaining chopped mint. Serve immediately with the dipping sauce on the side.
