
Mince Pie Brownies

These mince pie brownies combine the traditional rich, chocolatey gooeyness of your favourite brownies with the festive mince pie flavours of cranberries, currants and apples. You can enjoy them at home with family and friends whilst decorating the tree or wrap them individually as delicious gifts or stocking fillers.Time and servings

Ingredients
- 100 g of dried mixed fruit
- 100 g of sultanas
- 100 g of raisins
- 50 g of currants
- 50 g of chopped dates
- 50 g of dried cranberries
- 1 granny smith apple, coarsely grated
- 1 orange, zested and juiced
- 50 ml of brandy
- 50 ml of apple juice
- 100 g of dark chocolate, broken into pieces
- 60 g of unsalted butter, melted
- 100 g of dark brown soft sugar
- 2 eggs
- 1 tsp of mixed spice
- 50 g of ground almonds
- 50 g of plain flour
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4. Line a 30cm x 20cm brownie tin with baking paper.Step 2
In a large bowl, combine the mixed fruit, sultanas, raisins, currants, dates, cranberries, grated apple, orange zest and juice, brandy and apple juice and leave to infuse while you make the batter.Step 3
In a small pan, bring 200ml water up to a gentle simmer. Place a larger glass or metal bowl over the pan, ensuring the base doesn’t touch the water.Step 4
Add the dark chocolate to the bowl and leave it to melt. Once melted, remove the bowl and set aside.Step 5
In another large bowl using electric beaters or a standing mixer, whisk together the melted butter and sugar until well combined.Step 6
Add the eggs one at a time, whisking well in between each addition, until the batter is thick and glossy. Add in the melted chocolate and gently mix by hand until just combined.
