Mince Pienut Swirls

These crispy, squidgy Mince Pienut Swirls from OcadoLife recipe editor Lauren Hoffman contain a clever crème pât made with custard and mince pie peanut butter. If you prefer, you could swap out the peanut butter for a jar of mincemeat, to turn these mini pastries into an alternative to traditional mince pies. Either way, they’re perfect as a sweet canapé for a drinks party. Allow an extra 20 mins for chilling.

Ingredients

  • 1 (120g) pot custard
  • 2 tbsp Manilife Mince Pienut Butter
  • 1 (320g) sheet puff pastry
  • ½ orange, finely grated
  • 50g dried cranberries
  • 50g white chocolate chips
  • 1 egg, beaten
  • 2 tbsp caster sugar (optional)

Method

  • Step 1

    Empty the custard into a small bowl. Add the mince pienut butter and mix well.
  • Step 2

    Unroll the sheet of puff pastry (leaving the parchment intact) and spread evenly with the custard mixture. Scatter over the orange zest, cranberries and chocolate chips. Roll it up tightly into a log. Chill for at least 20 mins to firm up or until ready to bake.
  • Step 3

    Preheat the oven to 200°C/180°C fan/gas 6. Line 2 large baking sheets with baking paper. Slice the pastry log into 18 rounds, approx. 2 cm thick. Arrange on the baking sheets, brush with the beaten egg and bake for 20-25 mins until golden brown.
  • Step 4

    If you want to add shine to your pastries, mix the caster sugar with 2 tbsp water and brush over the pastries while they’re still hot from the oven. Uncooked pastries can be frozen for up to 3 months. Bake from frozen, adding an extra 10 mins or so to the baking time.
