
Mini Eyeball Cookies

For an easy, eye-catching Halloween treat, try these gloriously gory Mini Eyeball Cookies from David Atherton, Bake Off champ and author of My First Halloween Cookbook. Switch up the jam flavour if you fancy. Makes 10. Time and servings

Ingredients
- 50g unsalted butter
- 50g caster sugar
- 50g ground almonds
- 50g white spelt flour
- 5 tsp smooth blackcurrant jam, plus a little extra to decorate the eyes
- 10 tiny pieces white fondant icing
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4. In a large bowl, mix together the butter and sugar with an electric whisk or wooden spoon, until smooth. Add the almonds and spelt flour; mix until just combined.Step 2
Divide evenly into 10 pieces, roll into balls, then arrange on a lined baking tray. Use your thumb to flatten each cookie slightly and make an indent in the centre (the cracks add to the creepy effect). Fill each cookie with ½ tsp jam, then bake for 10-12 mins until golden at the edges; leave to cool.Step 3
Roll the 10 pieces of fondant icing into tiny balls; gently press into the middle of the jam to make the whites of the eyes. Add a dot more jam for the pupils. Store in an airtight container for up to 5 days.
