
Mini Heart Meringues

These cute Mini Heart Meringues from Eugene Korolev, head chef at London’s Sino, are great for any occasion when you want to show a bit of love. Top them with whatever takes your fancy – whipped cream and jam is a classic combo. This recipe makes 6. Allow extra time for the meringues to cool completely in the oven.

Ingredients
- 2 large egg whites
- 1 pinch salt
- 110g caster sugar
- ½ tsp cornflour
- ½ tsp white wine vinegar
Method
Step 1
Preheat the oven to 120°C/100°C fan/gas ½ and line a baking tray with baking paper.Step 2
Put the egg whites and salt into a clean mixing bowl and whisk to soft peaks using an electric whisk.Step 3
Add the sugar, 1 tbsp at a time, to the bowl, whisking continuously until stiff and glossy. Add the cornflour and vinegar; whisk briefly to combine.Step 4
Pipe 6 small heart shapes onto the prepared baking tray (leave a well in the centre if adding a filling). Bake for 1 hr 15 mins. Turn off the oven; leave the meringues to cool completely inside with the door ajar. They’ll keep in an airtight container for up to 5 days.
