Ingredients

  • 1 tsp butter (or spray oil), to grease
  • 2 wholemeal tortilla wraps
  • 70g passata
  • 1 tsp dried oregano
  • 60g mozzarella, grated
  • 40g red pepper, chopped
  • 40g yellow pepper, chopped
  • 6 basil leaves, cut into strips

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 6. Grease a 12-hole muffin tin with butter or spray oil.
  • Step 2

    Using a 7-8 cm round cutter, cut 12 circles from the tortilla wraps (6 from each); press into the muffin tin holes.
  • Step 3

    Divide the passata between the wraps, then top with a sprinkle of oregano, grated mozzarella, red and yellow peppers and basil leaf strips.
  • Step 4

    Bake for 9-10 mins until the wraps are golden brown and the cheese melted. These will keep chilled in an airtight container for up to 2 days.
