
Mini Lunchbox Pizzas

Ingredients
- 1 tsp butter (or spray oil), to grease
- 2 wholemeal tortilla wraps
- 70g passata
- 1 tsp dried oregano
- 60g mozzarella, grated
- 40g red pepper, chopped
- 40g yellow pepper, chopped
- 6 basil leaves, cut into strips
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Grease a 12-hole muffin tin with butter or spray oil.Step 2
Using a 7-8 cm round cutter, cut 12 circles from the tortilla wraps (6 from each); press into the muffin tin holes.Step 3
Divide the passata between the wraps, then top with a sprinkle of oregano, grated mozzarella, red and yellow peppers and basil leaf strips.Step 4
Bake for 9-10 mins until the wraps are golden brown and the cheese melted. These will keep chilled in an airtight container for up to 2 days.
