Miso and butter roasted salmon with spring onions

Ingredients

  • 1 side of salmon
  • 1.5 tbsp of caster sugar
  • 2 bunches of spring onions, trimmed
  • 40 g of butter, softened
  • 1 bag of peppery salad, to serve
  • 6 tbsp of white miso paste
  • 3 tbsp of mirin
  • 400 g of black rice, to serve

Method

  • Step 1

    Place the salmon in a container large enough to hold it. Mix together the miso, mirin and caster sugar and pour over the salmon, making sure that it’s entirely covered. Leave in the fridge for 30 mins or overnight.
  • Step 2

    Preheat oven to 200°C/180°C fan/gas 6.
  • Step 3

    Lay the spring onions around the salmon, coating them in any extra marinade.
  • Step 4

    Dot the butter over the salmon and onions and roast 20-25 mins, until the salmon flakes easily. Meanwhile cook the rice to pack instructions.
  • Step 5

    Rest for 5 mins before serving with rice and salad, saving 4 portions of fish, 1 portion of rice and a few spring onions for your lunches (if you like).
