
Miso Aubergine Udon

Our Miso Aubergine Udon dish is ready in 15 mins and made straight from the freezer. We’ve kept this veggie, but add any leftovers from your Sunday roast if you fancy something meaty, or boost with roasted veg to make it go further.

Ingredients
- 330g pack Itsu frozen miso aubergines
- 2 x frozen udon noodles
- 2 large handfuls frozen sliced mixed peppers
- 1 large handful frozen stir fry greens
- 1 frozen bone broth block
- 2 salad onions, finely sliced, optional
- Crispy chilli oil, to serve, optional
Method
Step 1
Set a frying pan over a medium heat and cook the aubergine to pack instructions.Step 2
Put a pan of boiling water over a high heat and cook the udon to pack instructions. Drain and set aside, reserving a cup of water.Step 3
Add the peppers and stir fry greens to the aubergine pan until cooked through.Step 4
Tip in the noodles, bone broth block, miso sachet and a splash of water and stir. Continue cooking until the block has melted and the noodles are coated in sauce, adding a little more water if needed. Serve sprinkled with onion and chilli oil, if you like.
