Miso Caesar Salad

We've given the trusty chicken Caesar a bit of a makeover. By swapping traditional flavours for a hit of savoury miso, this salad becomes something even more interesting. It’s still got all the bits you love—crunchy croutons, tender chicken, and heaps of parmesan—but with a deep, umami kick that’ll have you coming back for seconds.

Ingredients

  • 2 chicken breasts
  • 2 tbsp olive oil
  • ¼ ciabatta, torn into small pieces
  • 1 tbsp mayonnaise
  • 1 tbsp natural yoghurt
  • ½ lemon, juice only
  • 2 tbsp All Dressed Up Miso Sesame Dressing
  • 1 head of romaine lettuce, cut into bite-sized pieces
  • 3cm piece parmesan

Method

  • Step 1

    Set a frying pan over a medium heat. Add a splash of oil and cook the chicken for 5-6 mins on each side, or until golden and cooked through. Remove from the pan and rest for a few mins, then shred.
  • Step 2

    Return the pan to the heat, add another splash of oil and toss in the ciabatta. Fry until perfectly golden and crispy all over.
  • Step 3

    Put the mayonnaise, yoghurt, lemon juice and a good squeeze of the Miso Sesame dressing into the base of a large mixing bowl and whisk until combined. Season with plenty of freshly ground black pepper and extra Miso Sesame dressing, if you like.
  • Step 4

    Add the lettuce and shredded chicken to the bowl then toss until everything is well mixed and coated.
  • Step 5

    Scatter over the warm croutons and shave over the parmesan to serve.
