
Miso Onion Tartlets

Ingredients
- 6 onions, quartered
- 30g unsalted butter, melted
- 2 tbsp white miso
- 2 tbsp cooking sake
- 2 tbsp mirin
- 0.5 tsp runny honey, to taste (optional)
- 1 (320g) sheet ready-rolled puff pastry
- 3 thyme sprigs, leaves picked, to serve (optional)
- 6 handfuls bitter leaves, to serve (optional)
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Snugly arrange the onion quarters cut-sides up in a medium roasting tin.Step 2
Combine the butter, miso, sake, mirin and honey, if using, in a bowl with 1-2 tbsp of just-boiled water to loosen; stir well.Step 3
Pour the miso mixture over the onions, then cover tightly with foil and bake for 35-40 mins or until softened. Baste with the miso mixture and leave to cool a little.Step 4
Meanwhile, unroll the pastry; cut out 6 x 12cm discs. On each, score a border 1cm in from the edge, then arrange over 1-2 lined baking trays.Step 5
Arrange 4 onion quarters in the middle of each disc, then spoon a little miso mixture over the top, ensuring each onion is coated. Scatter over the thyme leaves, then bake for 30 mins or until the pastry is puffed and the onions are golden and slightly charred at the edges.Step 6
Remove from the oven; leave to cool. Best eaten at room temp, with bitter leaves, if liked.
