
Mob's Smashed Cucumber and Halloumi Salad

This smashed cucumber and sesame salad is made of cucumber, halloumi and a spicy dressing for a midday pick-me-up. The main part of the salad doesn’t take long at all; you’ll just fry your halloumi, break your cucumber up into pieces, and chop your spring onions. For your dressing, tahini, soy sauce and chilli oil come together for a fiery accompaniment to the dish. Ingredients
- 2 cucumbers
- 2 tbsp of olive oil
- 250 g of halloumi, chopped into small slices
- 2 tbsp of tahini
- 1 tbsp of soy sauce
- 2 tbsp of chilli oil, plus extra to serve
- 1 bunch of spring onions, roughly chopped
Method
Step 1
Gently bash the cucumbers with a rolling pin until they break up into large pieces. Chop these up into bite-sized pieces.Step 2
Pan fry the halloumi slices with a glug of olive oil for 2 mins on either side until golden brown and crispy.Step 3
In a large bowl, add in tahini and 3 tbsp of boiling water. Whisk well until smooth then add in the soy sauce and crispy chilli oil.Step 4
Add the cucumbers, halloumi and spring onions to the dressing. Toss well and serve up in bowls with more chilli oil.
