
Mojito Slushie

Kick back and cool off with a Mojito Slushie, created by food stylist and writer Emily Jonzen. Taking the signature Cuban cocktail to the next level, it’s made with a refreshing mojito-flavoured sorbet that’s packed with flavours of lime, mint and rum. Ingredients
- 50 g of demerara sugar
- 4 limes, all juiced, 2 zested
- 150 ml of golden rum
- 1 handful of mint leaves, plus extra sprigs to serve
- 1 x 460ml häagen-dazs lime mojito sorbet
- 6 tbsp of coconut cream
Method
Step 1
To make a sugar syrup, put the sugar in a small heavy-based saucepan with 50ml water and heat gently, swirling occasionally to encourage melting. Once the sugar has dissolved, increase the heat and boil for 1½ mins. Remove from the heat, pour into a clean jar and leave to cool. Chill until needed; it’ll keep for up to 1 month.Step 2
Put the lime juice, rum, mint, sorbet, coconut cream and 2tbsp of the sugar syrup into a blender; whizz until slushy. Pour into tall glasses filled with ice and top with the lime zest and mint sprigs.
