
Mojito strawberries with coconut yogurt

Ingredients
- 3 tbsp of light muscovado sugar
- 3 tbsp of white rum
- 2 limes, juice only
- 30 g of mint leaves, roughly chopped
- 500 g of strawberries, halved, or quartered if large
- 800 g of coconut yoghurt
Method
Step 1
In a large bowl, mix the sugar, rum, lime juice and mint, until the sugar dissolves. Stir in the strawberries and leave to macerate for at least 1 hr.Step 2
Spoon the yogurt into jars and top with the strawberries and juice. Decorate with extra mint leaves.
