Ingredients

  • 3 tbsp of light muscovado sugar
  • 3 tbsp of white rum
  • 2 limes, juice only
  • 30 g of mint leaves, roughly chopped
  • 500 g of strawberries, halved, or quartered if large
  • 800 g of coconut yoghurt

Method

  • Step 1

    In a large bowl, mix the sugar, rum, lime juice and mint, until the sugar dissolves. Stir in the strawberries and leave to macerate for at least 1 hr.
  • Step 2

    Spoon the yogurt into jars and top with the strawberries and juice. Decorate with extra mint leaves.
