
Moroccan Quinoa Salad

This salad would make a nice side for many Moroccan dishes and it also goes well by itself.Time and servings

Ingredients
- 60 g of pine nuts, toasted
- 30 g of pistachios, crushed
- 1 tbsp of olive oil
- 2 shallots, finely sliced
- 2 carrots, grated
- 300 g of quinoa, rinsed
- 2 tsp of honey
- 1 sprinkle of garlic granules
- 1 sprinkle of ground cinnamon
Method
Step 1
Rinse the quinoa through a fine sieve for a minute, then drain out excess water.Step 2
In a medium size saucepan saute the shallots until browned and crispy. Remove fromt he heat and add the quinoa.Step 3
Season with sea salt, white pepper, garlic granules and cinnamon.Step 4
Place the quinoa back on a low heat and stir for a bit to dry out the quinoa, add the grated carrots and honey.Step 5
Pour in 450ml of cold water, bring to the boil then cover with a lid and simmer for 20 minutes. Leave to stand for 10 minutes, then gently fluff with a fork.Step 6
Turn out onto a large serving platter or bowl and fold in toasted pine nuts. Garnish with crushed pistachios and enjoy.
