Moroccan Quinoa Salad

This salad would make a nice side for many Moroccan dishes and it also goes well by itself.

Ingredients

  • 60 g of pine nuts, toasted
  • 30 g of pistachios, crushed
  • 1 tbsp of olive oil
  • 2 shallots, finely sliced
  • 2 carrots, grated
  • 300 g of quinoa, rinsed
  • 2 tsp of honey
  • 1 sprinkle of garlic granules
  • 1 sprinkle of ground cinnamon

Method

  • Step 1

    Rinse the quinoa through a fine sieve for a minute, then drain out excess water.
  • Step 2

    In a medium size saucepan saute the shallots until browned and crispy. Remove fromt he heat and add the quinoa.
  • Step 3

    Season with sea salt, white pepper, garlic granules and cinnamon.
  • Step 4

    Place the quinoa back on a low heat and stir for a bit to dry out the quinoa, add the grated carrots and honey.
  • Step 5

    Pour in 450ml of cold water, bring to the boil then cover with a lid and simmer for 20 minutes. Leave to stand for 10 minutes, then gently fluff with a fork.
  • Step 6

    Turn out onto a large serving platter or bowl and fold in toasted pine nuts. Garnish with crushed pistachios and enjoy.
