Ingredients

  • 1 cinnamon stick, for the syrup
  • 0.5 grated nutmeg, for the syrup
  • 20 ml of freshly squeezed clementine juice
  • 15 ml of port
  • 40 ml of sparkling wine
  • 1 piece of orange peel, to garnish
  • 2 cloves
  • 1 vanilla pod, split
  • 50 g of caster sugar, mixed with 50ml of water
  • 35 ml of captain morgan's spiced rum

Method

  • Step 1

    First make the spiced syrup, warming the caster sugar with 50ml of water, the cinnamon stick, nutmeg, two cloves and a split vanilla pod together gently for 3-4 minutes, stirring occasionally. Leave to cool for 10 minutes.
  • Step 2

    Strain the liquid twice to remove bits and decant into a jar.
  • Step 3

    Shake the rum, 30ml of the spiced syrup, clementine juice and port in an ice-filled shaker for 15 seconds.
  • Step 4

    Pour into a chilled flute and gently add the sparkling wine. Stir with a long spoon. Squeeze orange peel to release oils over the drink. Garnish with a strip of orange peel or edible gold leaf.
