Mushroom and Cherry Tomato Skewers

Ingredients

  • 2 tbsp of olive oil
  • 1 tbsp of balsamic vinegar
  • 1 handful of rocket leaves, to serve
  • 1 sprinkle of parmesan, shaved, to serve
  • 1 clove of garlic, crushed
  • 16 chestnut mushrooms
  • 16 cherry tomatoes
  • 6 baby courgettes
  • 8 skewers
  • 1 pinch of chilli flakes

Method

  • Step 1

    Mix together the olive oil, balsamic vinegar, garlic and chilli flakes.
  • Step 2

    Place the mushrooms, tomatoes and courgettes in a freezer bag and then add the olive oil mixture, turning the bag several times until all the vegetables are coated in the mixture.
  • Step 3

    Set to one side for at least 30 minutes to marinate.
  • Step 4

    Thread the marinated vegetables on to the skewers and then place on a moderately hot grill or barbeque and cook for about 10 minutes turning as necessary.
  • Step 5

    Serve with rocket leaves and top with parmesan shavings.
