Nasi Goreng

This is a classic Indonesian dish of fried rice is the perfect way to breathe new life into yesterday’s rice, or to jazz up a ready packet of rice with rich spices, sweet tamarind and kicap manis. It’s a versatile recipe, so feel free to change up the vegetables used.

Ingredients

  • coconut or vegetable oil
  • 2 medium free-range eggs
  • 100g green beans, chopped into small pieces (or handful of frozen peas)
  • 2 tbsp Rempapa Balinese Spiced Tamarind Curry Paste
  • 250g cooked long grain rice, chilled (or a microwaveable packet)
  • 2 tsp kicap or ketjap manis
  • 2 tsp soy sauce, or to taste
  • 2 salad onions, sliced
  • 10g coriander, leaves picked and chopped
  • 0.5 cucumber, sliced
  • 50g pack prawn crackers
  • 2 tbsp Rempapa Red Hot Sambal Tumis Chilli Paste

Method

  • Step 1

    Set a wok over a medium heat and add 1 tbsp oil. The the eggs until golden at the edges and set aside.
  • Step 2

    Increase the heat to high, add the remaining 1 tbsp oil and green beans then stir-fry until just tender.
  • Step 3

    Stir through the curry paste and cook for 30 secs, until fragrant.
  • Step 4

    Tip in the rice, moving around to get rid of any lumps. Drizzle with kicap manis, soy sauce and stir until everything is well coated.
  • Step 5

    Add the salad onions and stir once more. Divide between serving bowls or plates, top with a fried egg and coriander. Serve with cucumber, prawn crackers and chilli paste.
