Ingredients
- 250g digestive biscuits
- 100g Flora Plant unsalted, melted
- 400ml Elmlea Double
- 600g cream cheese
- 150g icing sugar, plus extra to dust
- 2 tsp vanilla bean paste
- 300g strawberries, 200g finely chopped, 100g halved
Method
Step 1
Grease and line a 20cm loose bottom spring-form tin with non-stick baking parchment. Tip the biscuits into a food processor or into a bag and bash with a rolling pin until they make a fine crumb.Step 2
Mix in the Flora Plant unsalted and tip into the tin, pressing down evenly. Chill in the freezer for 10 mins to set.Step 3
Whisk together the Elmlea Double, cream cheese, icing sugar and vanilla bean paste until stiff and a spoon stands up vertically in the mix. Fold through the chopped strawberries and pour on top of the biscuit base.Step 4
Smooth the top with the back of a spoon and cover and chill in the fridge for 2 hrs or until set.Step 5
Remove from the tin and decorate with remaining 100g halved strawberries. Dust lightly with icing sugar to serve.
