No-machine strawberry ice cream

You don’t need a fancy machine to make this silky ice cream: simply mix the ingredients together and leave to set. You can even add a few extra ingredients like chocolate and hazelnuts, or vanilla and honey.

Ingredients

  • 300 ml of double cream
  • 200 ml of condensed milk
  • 1 tsp of vanilla extract
  • 400 g of strawberries, hulled and quartered

Method

  • Step 1

    Mash the strawberries either in a blender or by hand (this is easiest when the strawberries are a little overripe), stir in the vanilla extract and set aside.
  • Step 2

    Pour the cream and condensed milk into a large bowl and whip to soft peaks.
  • Step 3

    Fold through the strawberries and pour into a container. Freeze for a minimum of five hours.
  • Step 4

    Serve in scoops with fresh strawberries and wafer straws on the side.
