Ingredients
- 200g brown rice
- 6 tbsp olive oil
- 200g broccoli
- 200g cherry tomatoes
- 400g spinach
- 6 sundried tomatoes
- 1 avocado, sliced
- 2 tbsp Good4U Super Sprouts Super Beans
- 1 pinch smoked paprika
- Good4U Garlic & Chilli Salad Topper, for sprinkling
- 1 handful Good4U Super Sprouts Super Greens, for sprinkling
Method
Step 1
Cook the brown rice in a pan according to the pack instructions. Drain and set aside to steam dry slightly.Step 2
Meanwhile, heat 1 tbsp olive oil in a large pan over a medium-high heat. Add the broccoli and tomatoes and fry for 3 mins or until just tender and starting to brown.Step 3
To make the dressing, put 200g spinach, sundried tomatoes, 5 tbsp olive oil, a splash of water and a pinch of salt into a blender. Blend until smooth, adding the remaining water until you reach a drizzling consistency.Step 4
Divide the cooked brown rice between two bowls. Top with the remaining 200g spinach, cooked broccoli and tomatoes.Step 5
Top with avocado and Good4U Super Beans.Step 6
Drizzle over the spinach dressing and season with a little more salt and a pinch of paprika, if using.Step 7
Finish by scattering over the Good4U Garlic and Chilli Salad Toppers and Good4U Super Greens.
