Ingredients

  • 200g brown rice
  • 6 tbsp olive oil
  • 200g broccoli
  • 200g cherry tomatoes
  • 400g spinach
  • 6 sundried tomatoes
  • 1 avocado, sliced
  • 2 tbsp Good4U Super Sprouts Super Beans
  • 1 pinch smoked paprika
  • Good4U Garlic & Chilli Salad Topper, for sprinkling
  • 1 handful Good4U Super Sprouts Super Greens, for sprinkling

Method

  • Step 1

    Cook the brown rice in a pan according to the pack instructions. Drain and set aside to steam dry slightly.
  • Step 2

    Meanwhile, heat 1 tbsp olive oil in a large pan over a medium-high heat. Add the broccoli and tomatoes and fry for 3 mins or until just tender and starting to brown.
  • Step 3

    To make the dressing, put 200g spinach, sundried tomatoes, 5 tbsp olive oil, a splash of water and a pinch of salt into a blender. Blend until smooth, adding the remaining water until you reach a drizzling consistency.
  • Step 4

    Divide the cooked brown rice between two bowls. Top with the remaining 200g spinach, cooked broccoli and tomatoes.
  • Step 5

    Top with avocado and Good4U Super Beans.
  • Step 6

    Drizzle over the spinach dressing and season with a little more salt and a pinch of paprika, if using.
  • Step 7

    Finish by scattering over the Good4U Garlic and Chilli Salad Toppers and Good4U Super Greens.
