
Okonomi Hash Browns

Ingredients
- 1 (5 cm) piece of ginger, cut into matchsticks
- 2 tbsp rice vinegar
- 1 tsp sugar
- ½ tsp salt
- 2 drops of red food colouring (optional)
- 8 frozen potato hash browns
- 4 tbsp tonkatsu sauce
- 4 tbsp squeezy mayonnaise
- 2 salad onions, thinly sliced
- 1 sprinkling Clearspring Green Nori Sprinkle
- 1 sprinkling of bonito flakes
Method
Step 1
Microwave the ginger, vinegar, sugar and salt on full in a microwave-safe bowl, uncovered, for 30 secs until boiling. Mix in the food colouring, if using; set aside.Step 2
temperature (about 10°C hotter) and for a few mins longer, so they become extra crispy. Be sure to turn them halfway through cooking to ensure even crisping.Step 3
Arrange the hash browns on a plate; drain the ginger and scatter over the top. Zigzag the tonkatsu sauce and mayo over, then garnish with the salad onions, nori and bonito flakes.
