Ingredients
- 1 drizzle olive oil
- 1 (570g) jar carlin peas, drained and rinsed
- 1 (176g) jar marinated grilled peppers, drained
- 1 (400g) jar shakshuka sauce
- 4 free-range golden yolk eggs
- 1 large handful flat-leaf parsley, leaves picked and chopped
Method
Step 1
Heat a drizzle of olive oil in a pan, add the carlin peas and cook for 5 mins or so, until nutty.Step 2
Add the peppers (tear any larger pieces), then pour in the shakshuka sauce; bring to a simmer.Step 3
Make 4 dents in the sauce, then crack in the eggs; season with a little sea salt and black pepper.Step 4
Cover with a lid and leave to cook for 6-7 mins, or until the whites are set. Scatter over some chopped parsley and serve.
