
One-Pan Spaghetti and Meatballs

This quick and easy one-pot recipe can be on the table in less than 30 minutes, making it a perfect mid-week meal when you're looking to put your feet up.Time and servings

Ingredients
- 400 g of chopped tomatoes
- 2 tbsp of tomato puree
- 4 sprinkles of fresh parmesan, to serve
- 1 tbsp of bertolli light
- 2 celery sticks, trimmed
- 2 garlic cloves, peeled and finely chopped
- 2 sprigs of fresh rosemary
- 200 g of dried spaghetti
- 12 fresh beef meatballs
- 1 onion, peeled and diced
Method
Step 1
Warm the Bertolli Light in a large pan over a high heat. Add the meatballs and cook for 5 minutes, turning occassionally, until well browned all over.Step 2
Add the onion, celery and garlic, reduce the heat to medium and cook for 5 mintures, stirring occassionally, until soft.Step 3
Stiry in the rosemary, tomatoes and puree then bring to a simmer and cook uncovered for 5 minutes, until thickened slightly.Step 4
Pour over 750ml of boiling water and bring to the boil. Break the spaghetti in half and add it to the pan. Stir well then leave to simmer for 10 minutes, or until tender.Step 5
Remoce the rosemary and season to taste. Serve with plenty of grated parmesan and a dresse green salad.
