One-Pot Chicken Tagine

Using harissa and a chicken stock pot in this easy recipe adds bags of flavour in an instant.

Ingredients

  • 1 tbsp of olive oil
  • 4 boneless chicken breasts
  • 1 tbsp of harissa paste
  • 1 carrot, diced
  • 1 onion, large, sliced
  • 1 knorr chicken stock pot
  • 100 g of dried apricots, halved
  • 400 g of tinned cherry tomatoes

Method

  • Step 1

    Coat the chicken with the harissa. Heat the olive oil in a large saucepan, add the chicken and fry for 2-3 mins, turning. Remove and set aside.
  • Step 2

    Add the onion and carrot – fry for 4-5 mins until soft. Return chicken to the pan.
  • Step 3

    Stir in the stock, apricots and tomatoes – cover and cook on low for 45 mins.
  • Step 4

    Serve with couscous and top with coriander and flaked almonds.
