
One-Pot Chicken Tagine

Using harissa and a chicken stock pot in

Ingredients
- 1 tbsp of olive oil
- 4 boneless chicken breasts
- 1 tbsp of harissa paste
- 1 carrot, diced
- 1 onion, large, sliced
- 1 knorr chicken stock pot
- 100 g of dried apricots, halved
- 400 g of tinned cherry tomatoes
Method
Step 1
Coat the chicken with the harissa. Heat the olive oil in a large saucepan, add the chicken and fry for 2-3 mins, turning. Remove and set aside.Step 2
Add the onion and carrot – fry for 4-5 mins until soft. Return chicken to the pan.Step 3
Stir in the stock, apricots and tomatoes – cover and cook on low for 45 mins.Step 4
Serve with couscous and top with coriander and flaked almonds.
