
One Pot Lamb with Orzo

This is a pasta dish with a difference. Orzo is a cross between risotto rice and pasta, meaning that it's really filling. We've used lamb mince with plenty of fresh flavours to keep it tasting nice and light.For more great SORTED recipes just visit www.sortedfood.com!Time and servings

Ingredients
- 2 tsp of oregano
- 400 ml of lamb stock
- 200 g of orzo pasta
- 2 tsp of ground cinammon
- 1 clove of garlic, peeled
- 1 red onion
- 1 splash of olive oil
- 400 g of lean lamb mince
- 1 tin of chopped tomatoes
- 100 g of feta cheese, cut into chunks
- 2 sprigs of fresh parsley, chopped
Method
Step 1
Peel and dice the red onion, then fry in a hot pan with the oil for a few minutes.Step 2
Crush the garlic and add to the red onion with the oregano, cinnamon and lamb mince to brown for a few minutes. Add the chopped tomatoes and lamb stock, then simmer for half an hour.Step 3
Pour in the orzo and let it simmer for about 8 minutes so that the orzo is only just cooked.Step 4
Divide the pasta into 4 bowls, crumble over the feta and parsley and serve immediately with some garlic breadsticks.
